Crock Pot Chicken Parmesan

What do you need:

  • 6 boneless skinless chicken breasts
  • 2 cans of condensed cream of mushroom cream
  • 1 1/2 cups of milk
  • 1 cup converted long grain white rice
  • 1/4 cup grated Parmesan cheese to cover
  • 6 tablespoons of butter
  • 1 package 1-ounce dry onion soup mix
  • Salt and ground black pepper to taste

In a medium bowl, combine the condensed cream of mushroom soup, milk, rice, and soup mix. Place the chicken breasts in a slow cooker and put 1 tablespoon of butter on top of each. For the mushroom soup mix over the chicken, season with salt and pepper and then sprinkle with Parmesan. Cover and cook for 8 to 10 hours over low heat.

What do you need:

  • 4 boneless, skinless chicken breast halves, cubed
  • 1 can of condensed cream of chicken
  • 1 cup cream cheese
  • 1/8 cup margarine
  • 1 small package Italian-style dry salad dressing mix

In a slow cooker, combine chicken, margarine, and salad dressing mix. Cover and simmer for 5 to 6 hours. When done, add the cream of chicken soup and cream cheese and cook for an additional 1 1/2 hours on high. It is recommended to serve on top of cooked pasta or rice.

Thai Style Crock Pot Chicken Thighs

What do you need:

  • 1 kilogram of chicken thighs without skin
  • 3/4 cup light coconut milk
  • 3/4 cup hot sauce
  • 1/2 cup of chopped peanuts to cover
  • 1/4 cup peanut butter chunks
  • 2 tablespoons chopped cilantro to cover
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon of white sugar

In a large bowl, combine the coconut milk, sauce, peanut butter, ginger, lemon juice, soy sauce, and white sugar. Stir to combine the ingredients well. Place the chicken thighs in a slow cooker and pour the coconut milk mixture all over it. Mix to coat the chicken with sauce. Cover and cook for 8 to 9 hours over low heat. When ready, sprinkle with cilantro and garnish with chopped peanuts.
